Maison Bruno Paillard’s “Dosage Zero”

Bruno Paillard are a household name when it comes to the very finest champagnes. With this “Dosage Zero” (or “D:Z”) offering they have done it again! 

This Multi Vintage Champagne packs all of the Bruno Paillard craft, elegant bubbles, sophistication and class, but with no added sugar.  Crafted to express the purity of the northern climate and chalk soils, this is a Champagne experience that is unique and one worth a try! There’s a background acidity on show here but it is balanced and complex enough to provide a highly enjoyable Champagne. It’s a lively one for sure! The use of reserve wines is apparently key ; 50% is comprised of reserve wines – exceptionally high for Champagne – which includes vintages going back to 1985 in a solera-style system.  Some of these reserve wines underwent their first fermentation in barrel. Ageing is far longer than the legal requirement: D : Z has three to four years in bottle “sur lies”, followed by six months rest post-disgorgement, the date of which is stated on the back label. Their Classic 2018 is created in the small batch traditional method using the three classic varieties: Chardonnay, Pinot Noir and Pinot Meunier. The use of oak barrels and time on lees provide this wine with depth and complexity.
